Hi again. Going to share a nice appetizer recipe. Recently, I had a retirement carry in at work. The girl who was retiring really likes cucumbers. Also my long time friend, whose blog I am writing for, loves fresh cucumbers. So I decided to make cucumber sandwiches for the carry in and drop off a few for Juanita. I obtained the recipe from another friend and co-worker. The sandwiches were a hit. Even some people at the carry in, who did not care much for cucumbers, stated they were delicious. So here is the recipe and give it a try for a tea or other party.
Tea Time Cucumber Sandwiches
2 loves of small party breads such as rye, pumpernickel, or sourdough. (I used rye and pumpernickel)
2 to 3 cucumbers peeled and sliced in rounds
2 blocks of cream cheese (softened)
1 cup mayonnaise
1 envelope of Hidden Valley Ranch Dressing / Dip mix
Dill Weed (herb and spices isle at the store)
Mix softened cream cheese, mayonnaise, and ranch dressing mix together.
Spread slices of bread with cream cheese mixture, then top with slice of cucumber and sprinkle a little dill on top of cucumber.
Makes 35 to 40 open face sandwiches.
Easy and delicious. I like doing open face for the presentation.
