Like everyone probably already has guessed. I don't like to cook.
Or if I do, it needs to be fast with only about 15 or 20 minutes in the kitchen.
I have been baking and cooking because I want to be able to tell my clients who do the Leap diet what recipes are good to use and that they really do work. Some have been flops and I have ended up throwing the product away in the trash.
Today I made cheese. Cashew cheese that is.

If you are vegan, or have eliminated dairy, it looks like this one is a winner.
And the other good news is that I was in and out of the kitchen in about 20 minutes. That included clean up time too.
This recipe does require that you soak the cashews. I put them in the water to soak as I made my coffee this morning.

Vegan Cashew Cheese (Stupidly Easy!)
Note: You will have to soak the cashews for at least 1 hour. You can soak them for up to 24 hours. The longer you soak them the more creamy they will become. If you don't want to soak them for 24 hours, soaking them for an hour is totally sufficient.
Makes 1 cup (210g) Soy free / gluten free

Ingredients
1 cup cashews soaked in 3 cups of water for at least 1 hour. 130g, 709 ml
2 teaspoons lemon juice 10ml
1/2 teaspoon salt 3g
2 turns fresh black pepper
1/4 cup water 60ml
Instructions
Soak, drain and rinse cashews.
Place in a food processor, along with lemon juice, salt and black pepper.
Pulse for about 1 minute to combine ingredients.
Add water and process until completely smooth, about 2 -4 minutes.
Is it seriously that simple? Yes lovers, it is. xo
