Make it Monday - Zucchini bread - gluten free


One wonderful thing to do with a squash and zucchini is to put it into a bread.

For this Make it Monday, I wanted to make a gluten free bread, sorta of sweet, but not really.

I have mentioned an issue with gluten free baking is gluten normally provides the structure for baked goods. When you have a single gluten free flour, you end up with a crumbly mess instead of bread.

Other ways to give bread structure, have more than one type of gluten free flour in it and/or use eggs too.

Zucchini Bread Recipe

Ingredients

2 cups Almond flour

1/4 cup Tapioca flour

2 tablespoons Coconut flour

1/4 teaspoon nutmeg

1/4 teaspoon orange peel

3 teaspoons baking powder

1/4 cup maple syrup

1/2 cup oil

5 eggs

Directions

  1. Preheat oven to 350 degrees

  2. Oil a 9 X 5 inch pan

  3. Grate zucchini finely. Can leave the skin on. Squeeze the zucchini of excess water. Then pat dry with a paper towel to remove the excess water.

  4. In a large mixing bowl, mix the dry ingredients together.

  5. Beat the eggs into a froth, along with other wet ingredients.

  6. Stir in the grated zucchini

  7. Mix the wet ingredients with the dry ingredients until it resembles a cake batter.

  8. Put the batter into the pan

  9. Bake for 45-50 minutes.

  10. Check the doneness of the bread by inserting a toothpick into the bread. When it comes out clean, the bread is done.

  11. Cool in the pan for 15 minutes. Transfer to a cooling rack.

  12. Wait for 3 hours or overnight before slicing.

Storage:

Store in refrigerator for 4 days in an airtight container or ziploc bag.

Freezer - slice and put in a ziploc bag - can store for 1 to 2 months.

A not too sweet bread. If you like a sweeter bread, add 1 cup of maple syrup.
