New Year - new twist on old favorites.
Found this recipe in a diabetes management magazine. Looked good so I decided I would give it a try.
Savory Pumpkin Hummus
12 servings
Calories 38, Fat 2 gm, Sat Fat 0 gm, Protein 1 gm, Carbs 4 gm, Chol 0 gm, Fiber 1 gm, Sodium 101 mg
Ingredients
1 can (15 ounce) solid pack pumpkin
3 TBSP chopped fresh parsley
3 TBSP Tahini
3 TBSP fresh lemon juice
3 cloves of garlic
1 tsp ground cumin
1/2 tsp salt
1/8 tsp black pepper
1/8 tsp ground red pepper, plus additional for garnish
Assorted raw vegetable sticks
Directions
Combine pumpkin, 3 TBSP parsley, tahini, lemon juice, garlic, cumin, salt, black pepper and 1/8 tsp ground red pepper in food processor or blender; process until smooth.
Cover and refrigerate at least 2 hours to allow flavors to develop.
Sprinkle additional ground red pepper, if desired. Garnish with additional parsley.
Serve with assorted raw vegetable sticks.
