A very easy recipe. Also one that could be used for future breakfasts.
Applesauce Oatmeal Muffins
Ingredients
1 cup gluten free oats
1 cup Almond milk - or other type of allowed milk
1 cup almond flour
1/2 Cane sugar
1/2 unsweetened applesauce
1 large egg
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1 teaspoon cinnamon
raisins or nuts - optional
Directions:
Soak the oats in milk for about one hour.
Preheat oven to 400 degrees.
Combine the oat mixture with the applesauce and egg and mix until combined.
In a separate bowl measure and whisk (mix together) the dry ingredients together.
Add the wet ingredients to the dry ingredients. Mix them together until they are just combined. Don't overmix. Overmixing makes the muffin lose its nooks and crannies.
Add raisins or nuts if desired.
Spoon mixture into paper liners.
Bake for 20 to 25 minutes or until done.
Remove from muffin tins onto a cooling rack.
These can be frozen and reheated in the microwave for a quick breakfast.
